Bread with Quark & Fresh Figs

For a long time now I wanted to create a breakfast recipe a bit different, a bit inspiring so putting together slices of freshly toasted sourdough bread with quark and fresh figs gave me such a buzz of colours that I wanted to continue taking photos forever. Toasted bread is a classic for the mornings but I wanted to add some cheese or spread that would be fat-free but give a good amount of protein to start the day. Together with the sliced fresh figs, this breakfast looks like a version of a very healthy cheesecake so the recipe could be used for a weekday dessert instead.


Figs are such a luxury to have. We do own fig trees in Greece and my maternal granny owns a tree as big as a Sunseeker yacht in her village farm. Needless to say that there has never been a summer when we have been able to devour the whole tree. It’s literally impossible. My dad used to go up that tree every year, using a ladder to pick the ones that were closer to the edges as he always said that they were the best. The sunkissed ones. This tree though makes the sweetest, juiciest, loveliest and softest figs you could ever imagine. They are heavenly…I shouldn’t even have started talking about it as I’m drooling only with the idea. We get buckets and buckets of them, tens of hundreds…for FREE!

Now in the UK of course, I only find dark figs that I pay 50p each and sometimes in a pack of 4, half of them are rotten. Sigh! Beggers cannot be choosers so I did go to the supermarket and picked some figs from South Africa for this recipe. They were tiny but actually lovely looking little sweethearts.  


A healthy light breakfast that’s easy to make, if you can find fresh figs, it’ll provide all the delightful colours and the flavours to transport you mentally back to a seafront villa in Greece. Can you hear the summer waves?

  • 1 slice sourdough bread, toasted
  • 1 Tbsp quark, 0% fat
  • 1 fresh fig, sliced
  • 1 Tbsp pine nuts
  • 1 tsp honey
  • 1 tsp fresh thyme tips
  1. Spread the quark on the bread.
  2. Add the sliced figs and then pine nuts on top.
  3. Drizzle with honey and sprinkle the thyme.
