This is one of the recipes I do for my 5-year old daughter again and again. She absolutely loves it. I choose organic wholemeal self-raising flour instead of the white option to boost up the fibre. The eggs give iron, vitamin D and protein. The avocado provides healthy fats and the blueberries are full of antioxidants and vitamin C. Bananas are reach in potassium and substitute the use of sugar amazingly well. Try it out by following the instructions below. You can use seeds, nuts, coconut and/or dried fruit in the mixture if you wish to create your own combinations but I have kept it simple for you to start with. You can also serve with yogurt, honey or strawberries. I am getting so excited only thinking about the amazing combinations.


This recipe is full of antioxidants, fibre and protein. It’s tasty, satisfying and the children will love it. // Makes 4 small pancakes.


1 large free-range egg

1/2 ripe banana

3 Tbsp organic wholemeal self-raising flour

1/4 tsp ground cinnamon 

1 Tbsp extra-virgin olive oil

1/2 avocado and blueberries to decorate


1. Lightly beat the egg in a bowl and add the flour and cinnamon mixing well. 

2. Mash the banana with a fork and add it to the mixture. Mix well.

3. Heat the olive oil in a non-stick deep pan and add 2-3 Tbsp of your mixture.

3. Turn your pancakes when the one side is golden with a spatula.

4. Serve your lovely pancakes with fresh avocado slices and blueberries.

Note: It is a great dish to make for children. For the perfect avocado, I like to buy frozen avocado halves which I allow to thaw 2 hrs before I cook my dish.
